Sleeping Beauty, the actual princess, has long blonde hair.... why in Shrek the Third does she have brown hair?
Sleeping Beauty wasn't invented by Walt Disney, so you shouldn't regard that version as the "official" version.
I don't think the original story mentions hair colour at all.
I think they probably wanted to reduce the number of blondes though, they already had Cinderella and Rapunzel, and having a third would be overdose.
